A nice, meat free dinner courtesy of Betty Crocker & Bisquick

Recipe Ingredients for Veggie Pie

1 1/2 cups chopped spinach
12 oz frozen broccoli
1/2 onion, diced
1/4 cup frozen corn
1/2 cup bisquick heart smart
1 cup 1% milk
2 eggs
1/2 cup shredded cheddar cheese

Recipe Directions for Veggie Pie

  1. preheat oven to 400

  2. thaw spinach in microwave for +/- 1 minute

  3. steam broccoli in microwave, appx 2 minutes

  4. mix onion, spinach, corn, broccoli and cheese in pie pan

  5. in a bowl mix bisquick, milk, & eggs

  6. Pour bisquick mix over veggies

  7. bake 35 to 40 minutes
