Fresh basil and vegetables make this a refreshing salad and a nice, easy lunch!

Recipe Ingredients for Veggie & Pesto Salad

2 cups fresh basil
3 cloves garlic
1 tbsp pine nuts
1/2 cup olive oil
1/3 cup parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 cup diced tomatoes
1/2 cup diced green peppers
1/4 cup minced red onion
4 cups fusilli, cooked

Recipe Directions for Veggie & Pesto Salad

  1. Cook fusilli according to package directions (about 3-3 1/2 cups dry should work depending on the size of the pasta). Cool.

  2. Blend basil, garlic, pine nuts, olive oil, parmesan cheese, salt and black pepper in a food processor.

  3. Add basil mixture and vegetables to pasta and stir until well-blended. Chill until ready to serve.
