A great basic sauce for pasta. Low fat, lots of veggies.

Recipe Ingredients for Veggie Pasta Sauce

1 cup, chopped Onions
3 clove Garlic
1 cup, chopped Peppers, Sweet, Red
1 cup, pieces or slices Mushrooms
2 1tsp Olive Oil
28 oz Diced Tomatoes
28 oz Diced Tomatoes
6 oz Tomato Paste

Recipe Directions for Veggie Pasta Sauce

  1. Heat olive oil in a large saucepan. Add diced onions and minced garlic. Cook until onions are translucent.

  2. Add diced red pepper and mushrooms, stir well, cook for about 5 minutes. Add spices to taste, including dried oregano, basil, pepper, chii peppers, salt and pepper.

  3. Add tomatoes, reduce heat to a simmer, and allow to cook for at least one hour, to allow flavours to develop. Add tomato paste, perhaps a dash of red wine.
