Noodles with assorted vegatables and mustard/olive oil based dressing.

Recipe Ingredients for Veggie Pasta Salad

8 cups of spaghetti
1/3 cup of olives, chopped
1/4 cup of olive oil
2 tbsp of water
1 1/2 cups of grape tomatoes, halfed
1 1/2 cups of cucumber, diced
2 cups of asparagus, diced
2 tbsp of mustard, yellow mustard and coarse mustard
1 tbsp of lemon juice
1 medium avocado, diced
1/2 teaspoon garlic, minced
1 Salt and pepper to taste

Recipe Directions for Veggie Pasta Salad

  1. Cook dry pasta. Cool to room tempature.

  2. Blanch whole asparagus for one to two minutes, shock with ice water.

  3. Combine olives, tomatoes, cucumber, and diced, asparagus with cooled pasta.

  4. In a separate bowl, whisk olive oil, water, mustards, lemon, garlic, pepper and pinch of salt, until well combined.

  5. Combine dressing with pasta and veggies. Fold in diced avocado.
