A wonderful pasta with a tangy sauce made from fresh tomatoes and a wonderful source of carbohydrates and fiber. It has fried vegetables in every bite with a whip of sugar to have a wonderful tangy taste.

Recipe Ingredients for Veggie Pasta

10 oz Whole Wheat Pasta
1 cup Broccoli
1/2 cup Button Mushrooms
1/2 cup Red Bell Peppers
1/2 cup Tomato Puree
1/2 tsp Freshly Ground Pepper
1 tsp Cilantro for garnish
1/2 tsp Salt
1/2 tsp Brown Sugar
2 tsp Olive Oil
1 clove of Garlic
1/2 cup Spinach
1 tsp Basil
1 tsp Oregano
1/4 cup Skim Milk
2 cups Green Peas
1 tsp Lemon Juice
2 cup Carrot
1 cup Pinto Beans

Recipe Directions for Veggie Pasta

Heat 3 Quarts of water, bring it to boil. Add 10 oz pasta. Cook for 8 min. Drain water and keep to side. In non-stick skillet heat 2 tbsp Olive Oil and add all veggies. Stir fry on high for 3 min or until golden. After add pasta to veggies and garlic. Cook for 1 min. Add sauce from tomato puree. Add salt to taste as well as pepper. Cook for 3 min until pasta is golden brown or however you prefer. Add cilantro. Serve. Make Sure you serve green peas, carrots and pinto beans on the side with lemon juice and cilantro.
