Whole wheat pasta with steamed veggies and feta cheese

Recipe Ingredients for Veggie pasta with balsamic vinegar and pesto

16 oz whole wheat penne
575 g cauliflower (1 head)
122 g carrot, grated
1/4 onion
1 tsp garlic
1/4 cup balsamic vinegar
1/2 cup feta cheese
1/4 cup pesto
20 cherry tomatoes
1 cup peas, frozen

Recipe Directions for Veggie pasta with balsamic vinegar and pesto

  1. Steam veggies, onion, and garlic over boiling pasta water. Half the tomatoes and cover in balsamic vinegar while pasta and veggies are cooking.

  2. Once pasta is al dente,drain and set aside. Transfer veggie mixture to a large skillet and add tomatoes and vinegar. Add pesto and allow to simmer for 5-7 min until tomatoes are softened. Add feta and remove from heat.

  3. Mix pasta and veggies into a large bowl and serve immeidately.
