1 cup (1" cubes) Eggplant
0.5 cup, sliced Fennel, Bulb
1 tbsp Olive Oil
0.5 cup Reduced Fat 4 Cheese Mexican Shredded Cheese

Recipe Directions for Veggie Parmisan

Drizzle oil, salt & pepper on veggies and grill. Layer veggies with marinara sauce and cheese. Bake at 350 for 30-40 mins
