Recipe Ingredients for Veggie Pancakes

1 large baking potato, peeled and shredded
2 carrots, peeled and shredded
1 zucchini, shredded
1 small onion, finely chopped
1 large egg
1 large egg white
1/4 cup whole wheat flour
1/4 cup cornstarch
1/2 tsp baking powder
1/2 Salt
1/4 Pepper
1 tbs extra-virgin olive oil
1/2 cup shredded sharp white cheddar cheese

Recipe Directions for Veggie Pancakes

Mix shredded veggies with remaining ingredients except olive oil and cheese. Put some oil in a pan over med-high heat until browned on one side and then flip. Put some cheese on the browned side while browning the other side. Serve.
