A thick & fluffy 'pancake' with veggies and herbs incorporated into the batter.

Recipe Ingredients for Veggie 'Pancake'

1 tsp extra virgin olive oil
1 clove garlic
30 g red bell pepper, diced
20 g broccoli, chopped
1/2 tsp dried chopped chives
1 pinch oregano
3 g chicken stock cube (1/4 cube)
20 g canned corn

Batter:
55 g egg, whole
120 ml water
80 g wholewheat flour
1 pinch salt
1/8 tsp bicarbonate of soda

Recipe Directions for Veggie 'Pancake'

  1. Heat oil in a frying pan. Sauté veggies (except corn) till just soft. Add herbs and seasoning. Cook for 1 min. Remove from heat.

  2. Whisk up ingredients for batter in a bowl. Add in corn and sautéed veggies. Mix well.

  3. Pour mixture back into frying pan and spread out slightly. Cook evenly on both sides.

  4. Enjoy with your favourite dip/sauce/spread, topped with grated/feta/cottage cheese or just as it is!
