2 tablespoons chopped fresh basil
1 eggplant, chopped
2 tablespoons red wine vinegar
1 tablespoon extravirgin olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
1 1/2 ounces mozarella cheese
