Omlet made with egg beaters cooked in skillet with Pam, filled with veggies like green peppers, onions, spinach and or cooked broccoli or brussell sprouts and one wedge of laughing cow cheese.

Recipe Directions for veggie omlette

Heat small frying pan or crepe pan with cooking spray. Dice veggies and cook until soft. Add a little low fat ham or turkey breast or turkey bakon, diced, if desired. Add spinach and cook until wilted. Remove veggies and add more spray. Cook 1/2 to 3/4 cup egg beaters in pan until firm on the bottom. Use low to medium heat for best results. Add one wedge of laughing cow lowfat blue or swiss cheese, or a little parmesan cheese,cut up. Add cooked veggies/meat on top of eggs/cheese. Fold over omlette with spatula. Remove to plate.
