2 tbl Tomato, diced
1 slice of onion, diced
2 T shredded cheese
1/2 c raw spinach
1 tbl green chili pepper, diced

  1. beat eggs

  2. add to skillet

  3. add veggies and cheese

  4. fold

  5. add cheese to top

  6. steam with 1 t water
