Veggie Omlette with Spinach, Romato, Feta, Mushrooms, and Onions

Recipe Ingredients for Veggie Omelette

2 eggs
1/2 cup spinach
1 roma tomato
1/4 cup mushrooms
1/2 red onion
1/4 cup feta
1/2 teaspoon olive oil
1 salt
1 pepper

Recipe Directions for Veggie Omelette

  1. In one pan, heat up olive oil. Lightly sautee Mushrooms, onions, and spinach and set aside. Season with Salt.

  2. In another pan, (noncoated) cook omlette. Add tomatoes, feta, and sauteed vegetables. add salt and pepper to taste.
