Omelet with zucchini, onion and red bell pepper.

Recipe Ingredients for Veggie Omelet

4 eggs
1/2 zucchini
1 onion
1/2 red bell pepper
1/2 tsp oregano
1 tsp olive oil

Recipe Directions for Veggie Omelet

  1. Chop vegetables and soften in pan on medium heat.

  2. Beat eggs separately and season.

  3. Remove veggies from pan, add olive oil and heat to high heat before adding eggs.

  4. Add veggies on top and lower heat to medium-low.

  5. Cook according to taste (best to have the top a bit moist)
