Egg white and vegetable omelet - quick and easy

Recipe Ingredients for Veggie Omelet

1/2 cup egg white
1/2 cup squash, diced
1/4 cup onion, diced
1 teaspoon canola oil
1/2 ounce monterey jack cheese

Recipe Directions for Veggie Omelet

Saute onion and squash in canola oil until translucent. Add egg white and cook over medium heat until set. Top with shredded cheese and place skillet directly under broiler. Broil until cheese is melted and omelet puffs up.
