Recipe Ingredients for Veggie Omelet

3 egg whites
1/2 cup raw spinach
1/2 cup raw mushrooms
1/2 tsp olive oil
1/3 cup tofu
1/2 tomato

Recipe Directions for Veggie Omelet

wipe pan with olive oil, pour eggs and cook. in seperate pan saute veggies with a little olive oil. when eggs are ready pour veggies on 1/2 of a side. fold over and serve
