Veggie No Pasta Lasagna Recipe

Veggies instead of pasta- so good!

Recipe Ingredients for Veggie No Pasta Lasagna

15 oz Diced Tomatoes
6 oz Organic Tomato Paste
9 tsp Italian Seasoning
1 tsp Salt
20 oz Squash, Summer, Zucchini, Includes Skin
8 oz Eggplant
4 oz Goat, Soft Type Cheese
16 oz Plain Nonfat
1.5 cup flowerets Broccoli, Flower Clusters
16 oz Beef Sirloin
1 medium White Onion
0.5 tsp Pepper, Black
2 clove Garlic

Recipe Directions for Veggie No Pasta Lasagna

  1. Preheat oven to 375 degrees.

  2. Brown ground sirloin, diced onion and garlic in a skillet. Drain off fat. Add spices, tomatoes, tomato paste to the beef mixture and mix well while heating.

  3. Slice zucchini, squash ,and eggplant. Roughly chop broccoli florets. Set aside.

  4. In a medium bowl, combine crumbled goat cheese, greek yogurt and chopped broccoli. Mix well.

  5. Lightly spray the bottom of a 9x13 dish with cooking spray. Place a layer of zuchinni, squash, and eggplant on the bottom of the pan.

  6. Place a layer of meat sauce on top of the veggies.

  7. Dot that with the broccoli-yogurt mixture.

  8. Continue with this layering until you have used all of the ingredients.

  9. Top the entire dish with shredded mozerella and parmesan cheese.

  10. Bake for 45 minutes. Remove from oven and allow to sit for 10 minutes before serving.
