Vegetarian delight - fabulous with fresh summer veggies!

Recipe Ingredients for Veggie Napoleans

1 zucchini, sliced into 1/2 inch thick rounds
1 squash, sliced into 1/2 inch thick rounds
1 baby eggplant, sliced into 1/2 inch thick rounds
70 g portabella caps, (cup+chopped+raw), sliced in half sideways to make 4 discs
15 oz fat free ricotta cheese
1 egg, lightly beaten
10 oz frozen chopped spinach, thawed and squeezed dry
2 cups Prego Italian Sauce Tomato Basil Garlic
1 cup Reduced Fat Mozzarella Shredded Cheese

Recipe Directions for Veggie Napoleans

  1. Preheat oven to 400. Line 2 cookie sheets with aluminum foil, then spray with cooking spray. Arrange veggie rounds on sheets then spray veggies with cooking spray. Sprinkle wtih salt, pepper and italian seasoning on both sides. Roast at 400 for 10-12 minutes, or until veggies are tender and browned. Allow veggies to cool enough to handle.

  2. Meanwhile, in a large bowl, combine ricotta, spinach, egg, 3/4 cup mozzarella, a little nutmeg and salt & pepper to taste. Mix well, set aside.

  3. Prepare a 9x13 dish with aluminum foil & spray.

  4. When veggies are cool enough to handle, assemble into stacks as follows:

  5. Mushroom on bottom, 1 Tbsp ricotta mixture, eggplant, 1 Tbsp ricotta mixture, zucchini, 1 Tbsp ricotta mixture, squash. Repeat to create 8 stacks. Top stacks with marinara sauce and remaining mozzarella. Bake at 400 until sauce is bubbly and cheese is browned.

  6. Each serving yields 2 stacks.
