A slow-cooker, vegetarian mole chili.

Recipe Ingredients for Veggie Mole Chili

20 oz kidney beans
2 cloves garlic
1/2 onion, minced
1 yellow squash, minced
1 small eggplant, minced
1 cup spinach
1 cup mushrooms, minced
14 1/2 oz diced tomatoes
1 teaspoon oregano
1/2 teaspoon cayenne
1/2 teaspoon cinnamon
1/2 teaspoon orange rind, finely grated
1 tablespoon unsweetened chocolate

Recipe Directions for Veggie Mole Chili

It's not necessary to mince all the veggies, it just makes them easier to sneak past finicky eaters. Throw it all in a crockpot, add 1/2 cup water if necessary, and cook on low for 8 to 10 hours.
