1 cup zucchini
1 cup yellow squash
1/2 cup eggplant
1/2 cup potato
1 tbs margarine

Recipe Directions for Veggie Mix

  1. Slice 2 small zucchini

  2. Slice 1 yellow squash

  3. Dice 3 1/2" slices of eggplant

  4. Slice 3 small fingerling potatos

  5. Saute over medium heat in 1 tbs margarine until cooked through.
