Recipe Ingredients for Veggie Mini-Quiches

3 large Egg, Whole
1 bunch Spinach
4 oz 2% Milk Reduced Fat Mild Cheddar
2 oz Bell Pepper Green
0.5 cup, chopped Onions

Recipe Directions for Veggie Mini-Quiches

  1. Ingredients:

  2. 3 large eggs

  3. 1 large bunch fresh spinach

  4. 1/2 cup shredded reduced-fat cheese

  5. 1/4 cup diced bell peppers or mixture of both

  6. 1/2 cup diced onions

  7. Preparation:

  8. Makes 12 mini-quiches

  9. Need: muffin tin, cooking spray, oven

  10. 1. Heat oven to 350F

  11. 2. Spray the muffin tin cups with the cooking spray. Be sure not to omit this step, or the quiches will stick badly to the baking cups. Another option is to use silicone muffin pans.

  12. 3. If using fresh spinach, steam it in the microwave, press out all juice, then chop.

  13. 4. Mix the spinach, eggs, cheese, peppers, onions, in a bowl.

  14. 5. Fill the muffin tin cups with the mixture.

  15. 6. Bake at 350F or 20 minutes. You will know they are done when a knife inserted in the middle comes out clean.

  16. 7. Remove from cups to serve.
