A nice large cut mixture of vegetables

Recipe Ingredients for Veggie Medley

190 g Zucchini
100 g Mushrooms
40 g Shallots
100 g Red Pepper
70 g Cherry Tomato
2 tablespoons olive oil
2 tablespoons Parmesan 100% Grated
2 teaspoons perfect Pinch Garlic & Herb Salt Free

Recipe Directions for Veggie Medley

  1. 1/4 Zucchini lengthwise then slice in large chunks

  2. Cut Whole Fresh Mushrooms in 1/4's

  3. Slice Shallots

  4. Chunk Red Peppers in about 1/4" to /1/2" squares

  5. Cut Cherry Tomatoes in half

  6. Melt butter in Frying pan

  7. saute Mushrooms then add zucchini til about 1/2 cooked add pepper til about 1/2 cooked then add shallots and tomatoes let simmer about 2 minutes and add parmesan and garlic seasoning.

  8. Leftovers can be enjoyed cold in lunches the next day
