Recipe Ingredients for Veggie Medley

2 T olive oil
2 stalks celery, sliced
1/2 medium red onion, sliced
2 medium turnips, chopped
8 baby carrots, sliced
1 c red cabbage, sliced thin
4 c baby spinach leaves
1/4 c chives, chopped
3 T fresh parsley, chopped
2 t fresh thyme leaves
1 salt and pepper to taste
1/4 c vegetable broth
1 T fresh lemon juice

Recipe Directions for Veggie Medley

Saute celery and onion in olive oil on medium heat in nonstick skillet until slightly soft. Add carrots, turnips, and cabbage. Cover and cook on medium-low, stirring occasionally, about 5 minutes. Add remainder of ingredients, increase heat to medium, cover and cook until spinach is wilted and veggies are just soft.
