This healthy and hearty vegetarian meatloaf freezes well after it's baked. Just wrap well, label, and freeze. Let meatloaf thawe in the fridge overnight, then reheat at 350 degrees For 20-30 minutes until hot.

1 cup Organics Green Lentils Dry
3 tbsp Raw Wheat Germ
0.75 cup (8 fl oz) Water
1 cup Bread Crumbs
0.5 cup Rice, Brown, Medium-grain, Cooked
1 medium (2-1/2" dia) Onions
3 pieces Garlic Cloves
1 tsp Spices Oregano Leaves
1 tsp, leaves Thyme, Dried
1 tbsp Soy Sauce
4 tbsp Tomato Ketchup
1 serving Pepper Sauce
0.5 tsp Salt, Table
0.13 tsp Spices Ground Black Pepper
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Veggie Meatloaf - Busy Cooks About.com

  1. Preheat oven to 350 degrees F. Place lentils in a small saucepan and cover with water. Cook over low heat for 60 to 90 minutes, or until tender. Drain lentils, if necessary, and coarsely mash lentils. Combine with remaining ingredients. Pour mixture into a 9 x 5" loaf pan sprayed with nonstick cooking spray.

  2. Cover with foil and bake at 350 degrees for 30-40 minutes. Remove foil and bake for another 10-15 minutes or until loaf is firm to the touch.
