Marinara with carrots and zucchini

Recipe Ingredients for Veggie Marinara

1 tbl olive oil
1 onion
2 cloves garlic
2 carrots
2 zucchini
16 oz Organic Diced Tomatoes
8 oz Organic Tomato Sauce
2 oz green olives
2 tbl oregano
1 tbl fresh basil
1 teaspoon thyme
1 teaspoon salt

Recipe Directions for Veggie Marinara

  1. Saute Onion, garlic, shredded carrots, shredded zucchini in 1 tbl olive oil

  2. When soft lightly puree in blender

  3. Return to pan on medium heat

  4. add spices and tomatoes

  5. Reduce and thicken
