Recipe Ingredients for veggie manicotti

1/2 cup carrot
1/2 cup bell pepper
1/2 cup onion
1/2 cup zucchini
1/2 cup squash
1 tbsp garlic
1 egg
15 ounces part skim ricotta cheese
1 cup mozzarella
8 ounces manicotti
20 ounces pasta sauce, classico tomato & basil

Recipe Directions for veggie manicotti

  1. chop and sautae all veggies till tender

  2. mix egg, ricotta and cooled veggies

  3. boil manicotti till tender, slightley firmer than aldente

  4. stuff with ricotti mixture place in casseroll dish

  5. top with sauce and cheese

  6. bake at 350 for 35 minutes
