Recipe Ingredients for Veggie London Broil Roast

2 tbsp soy sauce
24 oz. beef
2 tsp black pepper
2 tbsp barbecue sauce
5 cloves garlic
1 small onion
2 c. green beans
28 oz. can tomatoes

Recipe Directions for Veggie London Broil Roast

  1. chop all vegetable ingredients, mince garlic, excluding canned tomatoes

  2. lightly cut a shallow diamond pattern into the roast

  3. sautee green beans, onion and garlic in a pan until lightly browned

  4. mix together bbq sauce, soy sauce, black pepper and rub into the beef

  5. place beef in a roasting pan, spoon sauteed green beans, garlic and onion over top, then cover with canned tomatoes

  6. tent with foil, then roast at 325 for 2/5-3.5 hours, until fork tender
