Originally, this is from the veganlunchbox.com's Loaf Generator. Go there for extra options! This is super customizable! This is a basic recipe, but add or delete ingredients as necessary. You can substitute alternate nuts, kinds of beans, grain (quinoa, cooked rice, couscous, etc), and vegetables. The liquid can also be the cooking water for the beans, tomato juice, anything. You can add bread crumbs or assorted seasonings to taste, too.

Recipe Ingredients for Veggie Loaf

1/2 cup walnuts
2 tablespoons olive oil
1 onion, diced
1 carrot, diced
2 cups cooked black beans,
2 celery stalks, diced
1 cup oatmeal
1/4 cup vegetable broth
1/2 cup corn meal
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 teaspoon ground cumin
2 tablespoons tomato paste
1/2 teaspoon worcestershire sauce
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Veggie Loaf

  1. Preheat oven to 350F. Spray an 8x8in baking pan with non-stick spray.

  2. Grind the nuts into a course meal using a food processor or spice/coffee grinder. Place in a large mixing bowl.

  3. Sauté any vegetables in the olive oil until soft. Add to the mixing bowl along with the remaining ingredients. Combine well, adding only enough liquid to create a moist loaf that holds together.

  4. Press mixture into pan and cook 45 minutes to an hour.
