So I wanted to make this with french onion soup mix, but did not have any so I used sloppy joe seasoning mix and it turned out really well. You can use soy sauce and alernative milk products if you want to make it vegan.

Recipe Ingredients for Veggie Loaf with Mashed Potatoes and Gravy

1 stalk celery
1 Carrots
1/2 onion
12 oz mushrooms
14 oz tofu
1/4 cup cooked brown rice
4 tbsp tbsp Soup Mix
1 tablespoon olive oil
4 serving The Original Worcestershire Sauce
4 medium potatoes
2 tablespoons smart balance butter
1/4 cup fat free sour cream
1 tablespoon olive oil
1 tablespoon flour
1 cup fat free vegetable broth
1/2 cup milk

Recipe Directions for Veggie Loaf with Mashed Potatoes and Gravy

  1. Chop all vegetables fine. Suatee with tofu in large skillet with 1/2 packet of soup seasoning and 1/2 of the worcestershire sauce until ingredients are dry. Combine tofu mixture with rice, form into loaf pan and bake at 350 for 20 to 30 minutes.

  2. Peel and cut potatoes into 1 inch cubes. Boil in water until soft. Drain potatoes leaving about a 1/4 cup of boiling water in pan. Mash potatoes with butter and sour cream.

  3. In pan that vegetables were sauteed in add 1 tblsp olive oil flour and remaining soup mix. Brown flour mixture until desired color. Whisk in vegetable broth and simmer gravy until thick. Whisk in milk and heat through.

  4. Serve and enjoy!
