Veggie Loaded Pasta Recipe

Tomatoes, zucchini, mushrooms, peppers in oil & vinegar

Recipe Ingredients for Veggie Loaded Pasta

8 ounces whole wheat spaghetti, uncooked
2 tbsp. extra virgin olive oil
1/2 cup onion, diced
2 zucchini, sliced
2 cups cherry tomatoes, halved
2 cups white mushrooms, sliced
1 1/2 cup frozen bell pepper blend (red, yellow, green)
15 green olives
2 cloves garlic
2 tsp. basil
1 tsp. salt
1 tsp. ground black pepper
1/4 cup vegetable broth
1/4 cup balsamic vinegar
1 tsp. tomato paste
3 tbsp. grated parmesan cheese

Recipe Directions for Veggie Loaded Pasta

  1. Start water boiling for noodles

  2. Cook noodles while making the vegetables

  3. Sauce: Heat e.v.o.o. in saute pan over Medium heat for about 1 minute

  4. Add garlic (I used the frozen cubes) and then vegetables, starting with the hardest first, and adding others as they soften

  5. Once all vegetables are softening, and it is at a simmer, season with S & P, and basil

  6. Add the vegetable broth, and balsamic vinegar, and tomato paste

  7. Simmer for a few minutes until everything is soft and flavorful- but not soggy

  8. sprinkle the cheese in and stir lightly

  9. *note- the sodium level is very high on this analysis. my broth was low sodium, but i couldn't find an equivalent on here. if you use low sodium, and not so much salt to season it won't be as high.

  10. I also used a tomato variety pack from Trader Joe's. It had little tomatoes that were cherry, yellow, and these green ones that looked like tiny watermelons
