You can add chicken or steak marinaded in soy sauce and grilled, but I like the vegan style

Recipe Ingredients for Veggie Lettuce Wraps

6 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup, chopped Peppers, Sweet, Red
1 large (5" long) Pepper, Banana
1 cup Mung Beans, Mature Seeds, Sprouted
2 tbsp Soy Sauce
1 tbsp Apricot Preserves
3 clove Garlic
3 tsp Ginger Root
16 leaf Lettuce, Iceberg
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Veggie Lettuce Wraps

  1. Chop up scallions, peppers, garlic and ginger.

  2. Heat wok over high heat x 1 minute. Add olive oil and add garlic and ginger 30 seconds later.

  3. Toss in peppers and scallions and mix well for 1 minute.

  4. Reduce heat and add bean sprouts and cook x 2 minutes

  5. Drizzle soy sauce and cook for 1 minute more.

  6. Add apricot preserves and mix well until thick x 1 minute.

  7. Spoon a small amount of mixture on 16 ice berg lettuce leaves and use the leaves as a wrap.

  8. Serves 4-8 depending on course!
