Bacon and Sherry enhance this vegetable lentil soup

Recipe Ingredients for Veggie Lentil soup

3 medium slices bacon
1 cup lentils
1/2 cup red lentils
2 stalks celery
3 small carrots
28 oz. of diced tomatoes
1 1/2 cups chicken stock
3 cups water
3 cups collard greens
1/2 cup red cabbage
1/3 cup cooking sherry
1/4 cup parsley

Recipe Directions for Veggie Lentil soup

  1. Fry bacon in dutch oven until crisp.

  2. Add all vegetables except greens and cabbage. Sautee until soft.

  3. Add sherry

  4. Add lentils

  5. Add tomatoes

  6. Add stock and water (enough water to cover lentils)

  7. Bring to a boil, then reduce heat to med. or med. low.

  8. When lentils are soft add salt, pepper, cabbage and greens and cook until vegetables are cooked through.

  9. Serve with parmesean and parsley
