Very quick and easy vegetarian lasagne

Recipe Ingredients for Veggie Lasagne

1 onion
2 zucchinis
100 grams mushrooms
400 grams pumpkin
800 grams tinned tomatoes
400 grams pasta
1 tablespoon butter
1 tablespoon flour
1 cup low fat milk
1/2 cup cheese

Recipe Directions for Veggie Lasagne

  1. Chop or grate pumpkin, zucchini and onion

  2. Fry in a pan with a little water at the bottom to prevent sticking

  3. Once the veggies are soft, add tinned tomatoes

  4. Season with salt, pepper, garlic, herbs, etc

  5. Layer mixture with dry pasta sheets until all mixture is used up

  6. Melt butter in a small saucepan and mix in flour to make a paste

  7. Add milk very gradually, stirring in between each addition until smooth

  8. Add cheese and stir until melted

  9. Pour cheese sauce on top of the layered lasagne

  10. Cook in a 180c oven for 20-30 minutes
