Veggie twist on a classic. Great for a smaller family. Most lasagna dishes serve 10-12. This one is made in a smaller pan and is great if your family doesn't prefer leftovers.

Recipe Ingredients for Veggie Lasagna

2 teaspoons olive oil
1/3 cup chopped onion
2 1/2 cups zucchini, sliced
1 cup low-fat ricotta
3 tablespoons fresh Parmesan
1/4 teaspoon black pepper
6 ounces whole wheat lasagna noodles
2 cups Organic Traditional Pasta Sauce
1 cup low fat mozzarella

Recipe Directions for Veggie Lasagna

  1. Heat oil in skillet over med-high heat. Add onions and zucchini; heat 5 minutes or until tender, stirring. Remove from heat; set aside. In small bowl, mix ricotta, Parmesan, 3/4 cup mozzarella, and pepper.

  2. To assemble, place 3 lasagna noodles in the bottom of a 2 quart baking dish. Spoon half of ricotta mixture over noodles. Top with half of veggie mixture. Spread half of sauce over veggies. Repeat.

  3. Bake covered at 375 for 30 minutes. Sprinkle with remainder of mozzarella. Return to over for 10 minutes uncovered. Let stand 10 minutes before serving.
