A very tasty low(er) calorie casserole

Recipe Ingredients for Veggie Lasagna

12 oz Sausage, Italian, Sweet, Links
2 large Squash, Summer, Zucchini, Includes Skin
1 medium raw Bell Pepper Red
1 medium raw Onion Yellow
1 tsp Garlic
1 cup Newman's Own Marinara Sauce
2 large Egg, White
15 oz Fat Free Ricotta Cheese
2 tsp Italian Herb Seasoning Grinder
0.5 tsp Pepper, Black
0.67 cup Cheeses, Low Fat Mozzarella
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Veggie Lasagna

  1. Slice zucchini pretty thin, grill till tender and lightly browned

  2. Brown and degrease meat, add marinara reduce for c. 5 minutes, sauce will be very thick.

  3. in mixing bowl combine egg whites, ricotta, italian seasoning and pepper till well combined.

  4. Assembly - Half Meat sauce, Half zucchini, Half ricotta mixture, half mozzarella. Repeat top with parmesan.

  5. Bake for 40 minutes

  6. Let stand for 5 minutes before serving.
