Makes 4 servings



Use zucchini in place of lasagne noodles!! Low carb. Can be completely vegetarian.

Recipe Ingredients for Veggie Lasagna

3 medium zucchini
1 clove garlic
2 cups pasta sauce
3/4 cups ricotta cheese, fat free
3/4 cups mozzarella cheese
8 oz turkey, ground

Recipe Directions for Veggie Lasagna

  1. these amounts are off to match the calories of my ingredients more closely. really used almost whole tub of fat-free ricotta (about 1 1/4 cups+). whole tub has only 280 cal, 40 cal/.24 c. serving, 7 serving total

  2. mandolin (or thinly slice) the 3 zucchini lengthwise, season

  3. brown and cook through ground turkey. add garlic and seasoning (salt, pepper, italian herbs, red pepper flakes, etc.)

  4. preheat oven to 350

  5. put some sauce on bottom of pan then layer zucchini, ricotta, sauce, and meat. layer until use all ingredients, approx. 3 layers.

  6. sprinkle mozzarella on top.

  7. bake approx 25-30 minutes.

  8. serves 4
