Just a lasagna I threw together with stuff I had on hand.

Recipe Ingredients for Veggie Lasagna

8 oz lasagna noodles, Hodgson Mill Whole Wheat
24 oz jar spaghetti sauce, Newman's Own, Buckaroo
2 cup low fat cottage cheese
1 egg
1 tsp italian seasoning
1 cup spinach
2 cup zucchini
1 cup carrot, chopped
1/2 cup onion
20 oz mozzarella
1/4 cup parmesan
1 cup mushrooms, diced
1/2 cup onion

Recipe Directions for Veggie Lasagna

  1. cook lasagna noodles according to package.

  2. chop all the veggies- Sautee in pan for 1 min to soften (use pam).

  3. combine egg, ricotta and parmesan.

  4. pour some sauce on bottom of pan.

  5. Layer with noodle, ricotta mixture, veggies, sauce, mozz. cheese.

  6. Repeat. Make sure to end with cheese.

  7. Bake in oven 45 min. Check for doneness.
