Recipe Ingredients for Veggie Lasagna

16 oz lasagna noodles
20 oz spaghetti sauce
3 cups low fat cottage cheese
2 cups mozzarella cheese
1 egg
14 oz mushrooms
1 cup spinach
12 oz artichoke hearts

Recipe Directions for Veggie Lasagna

  1. Mix cheeses and eggs in a large bowl

  2. Cover the bottom of a 9x13 baking dish with a small amount of spaghetti sauce

  3. Assemble lasagna

  4. layer of noodles

  5. layer of cheese

  6. layer of sauce

  7. layer of noodles

  8. layer of veggies

  9. layer of cheese

  10. layer of noodles

  11. layer of sauce

  12. layer of veggies

  13. layer of noodles

  14. layer of sauce and cheese

  15. Bake in 350 oven, covered in foil for 50 mins

  16. uncover and let cheese melt/brown for 10 minutes

  17. let stand 10 minutes before serving
