Veggie Lasagna Recipe

Good for you and yummy whole wheat and veggie lasagna.

Recipe Ingredients for Veggie Lasagna

2 oz. Whole Wheat Lasagna Noodles
1 c. chopped onion
1 t. minced garlic
1 1/2 c. carrots, sliced thin
2 c. zucchini, sliced thin
15 oz. fat free Ricotta Cheese
8 oz. Fontina cheese
1 Mushrooms
1/2 c. Parmesan cheese
8 c. marinara sauce

Recipe Directions for Veggie Lasagna

  1. Saute onion and garlic in olive oil.

  2. Add carrots and zucchini to above and saute' until cooked

  3. Mix Ricotta and 1/4 t. nutmeg and set aside

  4. Layer in 9x13 pan:

  6. 3 blanched pasta noodles

  7. Cheese mixture

  8. 4 oz. shredded Fontina

  9. Sauce

  10. 3 blanched pasta noodles

  11. Sauce

  12. Cooked vegetables

  13. Fresh sliced mushrooms

  14. 1/2 t. Basil

  15. 1/2 t. Oregano

  16. 4 oz. shredded Fontina

  17. 1/2 c. Parmesan cheese

  18. Sauce

  19. Bake at 350 approx. 45-50 minutes. Let stand 5-10 minutes before serving.
