Veggie lasagna w mushrooms & broccol, using lasagna noodles. 12 servings per 9x12 pan.

Recipe Ingredients for Veggie lasagna

2 cups Broccoli
1 cup spinach
24 oz spaghetti sauce
8 oz lasagna noodles
4 oz low-fat ricotta cheese
8 oz fat free cottage cheese
8 oz mozzarella, low-fat
2 cups mushrooms
3 tbsp oregano
1 tsp salt
1/2 cup carrots
1/4 cup sweet pepper
3/4 cup onions

Recipe Directions for Veggie lasagna

  1. Saute onions and mushrooms together.

  2. boil lasagna noodles.

  3. Mix together ricotta, cottage cheese, spinach (I used frozen) and oregano (I used fresh). Let sit so it begins to warm (easier to spread that way).

  4. When onion/mushrooms are cooked, add the other vegetables and the spaghetti sauce & let it simmer.

  5. When noodles are finished cooking, assemble the lasagna like this:

  6. 3/4 c sauce

  7. layer of noodles

  8. 3/4 c sauce

  9. 1/2 - 3/4 c ricotta/cottage cheese mixture

  10. @ half the bag of mozzarella

  11. (repeat).

  12. I am very generous with the cheeses & sauces and usually only end up with a couple of layers. If you want more noodles and less sauce/cheese, you can make it in three layers, and on the top layer you can do Sauce and Mozzarella as the crowning glory.
