Healthy lasagna made with fresh veggies and marinara sauce.

Recipe Ingredients for Veggie Lasagna

8 oz whole wheat lasagna noodles
26 oz marinara sauce
2 1/2 cups mozzarella, part skim milk cheese
1 cup Parmesan, grated
2 yellow squash
1 tomato
2 cups diced mushrooms, portabella
3 cloves garlic
1 green pepper

Recipe Directions for Veggie Lasagna

  1. Preheat oven to 350.

  2. Cook noodles on stove until al dente.

  3. Spread 2 tbsp sauce in bottom of 9 x 13 glass pan.

  4. Chop veggies and mix with sauce in a bowl.

  5. Grate cheeses together in a bowl.

  6. Layer noodles, then veggie/sauce mix, then cheese. Noodles, veggie/sauce mix, cheese. It takes about 4 full noodles to cover a layer.

  7. Bake until cheese is bubbly and golden brown.

  8. *Optional: add some fresh spinach leaves sprinkled on top of veggie layer before cheese.
