Veggie Lasagna Recipe

You can use whatever leftover vegetables you have on hand. I use eggplant from my garden, and then just add whatever is in the fridge. My son likes this combo - he's a broccoli nut!

Recipe Ingredients for Veggie Lasagna

6 oz lasagna noodles, whole wheat
1 tbsp olive oil
1/2 cup tomato paste
2 cups hot water
3 tbsp basil, chopped
1 tsp garlic powder
1 tsp fennel, crushed
1/2 tsp oregano
1/2 tsp thyme
1 pepper to taste
1 small eggplant, sliced thin
1 cup broccoli, cooked
1/2 cup red onion, sliced thin
8 oz tofu, extra firm, sliced thin
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese

Recipe Directions for Veggie Lasagna

  1. boil broccoli (if frozen) in the water you will use for the lasagna noodles, adding the 1 tbsp olive oil to the water before cooking.

  2. when broccoli has cooked a couple of minutes, add the lasagna noodles and boil about 8-9 minutes.

  3. while noodles and broccoli are boiling, mix the tomato paste with the spices.

  4. when noodles and broccoli are done, use two cups of the same water to mix with the tomato paste mixture - mix well, making sure there are no lumps of tomato paste.

  5. prepare 9x11 baking dish or pan with cooking spray.

  6. pour 1/2 cup tomato sauce on bottom of pan.

  7. layer remaining ingredients - noodles, eggplant, broccoli, onion, cheddar cheese in first layer, pour 1/2 cup sauce, then second layer of noodles, tofu, eggplant, broccoli, onion, some cheese (not a lot), pour 1/2 cup sauce, then remaining noodles, eggplant, broccoli, onion, sauce, and then mozzarella cheese.

  8. bake at 375 degrees, covered with foil, for about 30 minutes.

  9. remove foil and bake another 15 minutes or so, or until lightly browned on top.
