use either 2 zucchini or 1 eggplant

Recipe Ingredients for Veggie Lasagna

1 medium eggplant
3 cup Crystal Farms Part Skim Ricotta
1 egg
8 oz mushroom
1/2 cup roasted red pepper
1/2 teaspoon salt
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon parsley
1/2 teaspoon garlic powder
1/2 cup mozzarella

Recipe Directions for Veggie Lasagna

  1. cut eggplant or zuchini to 1/4" pieces. Brown.

  2. combine ricotta, egg, mushroom, seasonings, peppers.

  3. salt/pepper to taste. dash garlic or powder.

  4. layer veggie with the bowl mixture; top with mozzarella.

  5. COVER WITH FOIL except last 10 minutes.

  6. bake 350 for 30 minutes.
