Recipe Ingredients for Veggie heavy meat loaf

2 lbs ground beef, lean
1 cup bell pepper
1 cup onion
1 cup carrot
1 cup spinach
1 egg
1 cup panko bread crumbs
1/2 cup tomato sauce
2 tsp salt
1 tsp pepper

Recipe Directions for Veggie heavy meat loaf

  1. place bell pepper, carrots, onion and spinach in food processor. Pulse until pureed.

  2. Mix meat, puree, panko crumbs, tomato sauce, egg & salt/pepper. Add more bread crumbs or sauce as needed.

  3. Shape meat into loaf shape and place in pan.

  4. Bake at 350 for 1:15 minutes.
