Use 2 pkg (350 g each) veggie ground round instead of ground beef

Recipe Ingredients for Veggie Ground Chili

20 oz ground round
8 bacon
1 cup onion, chopped
1 cup green pepper, chopped
4 stalks celery, chopped
28 oz tomatoes, canned, diced
28 oz tomatoes, canned,crushed
19 oz red kidney beans, canned
19 oz white kidney beans, canned
19 oz chickpeas, canned
8 oz mushrooms
10 oz beef broth
1 tsp cumin
1 tsp basil
1 tsp oregano
1 tsp parsley
1 tsp paprika
1 tsp thyme
1 tsp red pepper flakes
1 tsp garlic salt
6 tsp chili powder
1/2 tsp black pepper

Recipe Directions for Veggie Ground Chili

  1. Chop bacon and fry in large kettle until lightly crispy. Remove bacon and add ground round, onion, garlic and all spices and herbs to kettle. Cook until the meat (substitute) is browned and the onion is transparent Add celery and green pepper Cook until vegetables are tender

  2. Add tomatoes, cooked bacon and broth

  3. Bring to a boil, cover and simmer 1 hour

  4. Add beans and mushrooms and cook at least 24-48 hours longer at low simmer The longer it cooks, the better as this breaks down the enzymes in the beans and prevents gas

  5. Recipe can be doubled.
