Veggie Green Chili Enchiladas Recipe

Recipe Ingredients for veggie green chili enchiladas

3 tsp olive oil
1 tbsp lime juice
1 package tofu
8 oz fresh spinach
8 mushrooms
3 green chili pepper
1 jalapeno chili pepper
1 tsp cumin
1 tsp paprika
1 tsp chili flakes
14 enchilada sized tortillas
3 tbsp cilantro
1 tbsp flax seeds
3 cups enchilada sauce
1/2 cup sliced black olives
6 oz monterey jack cheese
1/2 tsp salt

Recipe Directions for veggie green chili enchiladas

  1. sear tofu in olive oil

  2. add lime juice, chilis, and mushrooms, continue to saute.

  3. add spices after 3-4 mins, once mushrooms begin to shrink down. Saute an extra 5 minutes.

  4. Add spinach, saute until it has wilted, 3-4 mins.

  5. spoon veggie/tofu mixture into tortillas, roll up, and place in casserole dish.

  6. pour enchilada sauce over enchiladas. Make sure each has been coated in sauce. garnish with black olives, flax seeds and cheese.

  7. bake covered in tin foil at 350 for 35 minutes.

  8. Remove and garnish further with chopped chilantro.
