Recipe Ingredients for Veggie gratin

1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
500 grams Zucchini
2 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
3 clove Garlic
0.5 tsp Oregano, Ground
390 grams Italian Chopped Tomatoes
1 serving VIGO ITAL RED WINE VINEGAR
180 grams Wine
120 grams Goat, Soft Type Cheese
50 grams Bread Crumbs, Dry, Grated, Plain
20 grams Parmesan, Grated Cheese

Recipe Directions for Veggie gratin

  1. Place the peppers on an oiled roasting tray. Turn your oven on to a temperature of 180C, fan 160C, gas 4; put the peppers in while it?s heating up and leave in for about 20 minutes until soft. Remove from the oven and leave until cool enough to handle. Slice into thick slices, discarding the stalk, skin and seeds, and set aside.

  2. Meanwhile, heat 1 tablespoon of the olive oil in a large, heavy-based pan. Add the onion, garlic and oregano and cook until soft. Add the tomatoes, vinegar and wine. Season. Reduce the heat and simmer for 10 minutes.

  3. Heat a non-stick griddle pan until hot. Grill the courgettes, aubergines and peppers in batches until grill lines appear.

  4. Layer the vegetables in a 1.5 litre ovenproof dish with the sauce and

  5. sliced goats? cheese. Whiz the bread and parmesan with the remaining 1 tablespoon oil and the parsley in a food processor until coarsely chopped and sprinkle over the layered vegetables.

  6. Bake in the oven for 20-30 minutes until 5. cooked through.
