Hearty, healthy vegetable and grain soup.

Recipe Ingredients for Veggie Grain Soup

3 tbsp vegetable oil
3 medium onions
4 cloves garlic
4 carrots
3 cups chopped celery
6 small yukon gold potatoes
5 cups beef broth
1/2 cup pearl barley
14 oz can black beans
1 tbsp tomato paste
1/3 cup tomato sauce
1 lb green beans
1 bell pepper
2 cups cooked white rice

Recipe Directions for Veggie Grain Soup

  1. Heat oil in a large pot over medium heat

  2. Chop onions, garlic, carrots, celery and potatoes.

  3. Saute onions and garlic until onion turns translucent.

  4. Add carrots, celery, and potatoes, saute 2-3 minutes.

  5. Add broth, barley, beans, tomato sauce and paste, and green beans; bring to a boil.

  6. Turn heat to medium-low and simmer until potato and barley are tender.

  7. Add bell pepper and rice, simmer until bell pepper softens slightly.

  8. Season to taste. Recommended: 2 tbsp Italian Seasoning, 1/2 tsp cayenne pepper, salt and pepper to taste.

  9. If you don't have any cooked rice, add 1/2 to 1 cup when barley is added. Brown rice could also be used in place of either grain.

  10. To make this meal vegan, substitute vegan vegetable broth for the beef broth.
