Delicious but a bit high on the fat

Recipe Ingredients for Veggie Fritters

1 Red Onion
1 carrot
1 sweetpotato
1/2 red pepper
1/2 cup flour
1 tablespoon flaxseed meal
3 tablespoons water
1 tablespoon parsley
4 tablespoons peanut oil

Recipe Directions for Veggie Fritters

  1. Shred the onion, carrot and sweet potato.

  2. Drain in a colander, squeezing out liquid.

  3. Mince the red pepper and parsley.

  4. Combine everything except for the oil in a bowl and mix well.

  5. Using a flat tablespoon make small fritters and drop into hot oil.

  6. Cook until brown, flip and cook until brown.

  7. Make them thin!

  8. The oil is variable, 4 tablespoons is probably what was absorbed, hence that amount.
