Eggs, cheese and veggies - who could ask for more?!

Recipe Ingredients for Veggie Frittata

4 large eggs
1 tbsp olive oil
1 medium onion
1 small bell pepper
1 ounce sharp cheddar cheese
1 ounce mozzarella cheese
1 ounce feta cheese
1 pepper

Recipe Directions for Veggie Frittata

Dice vegetables and brown in olive oil in iron skillet. Whisk eggs and pour over the top of the vegetables. Top with cheeses and allow to cook over low heat for approx. 10-12 minutes until set. Place in oven under broiler for 3-4 minutes until browned. Enjoy.
